The perfect meal for anytime of the day is this farmer’s breakfast skillet recipe. You can change up this recipe for any number of people. Also change to add in things you have on hand instead of the standard ingredients. This is a very versatile recipe that is good for breakfast, lunch, or dinner! For every person you are serving you will need:

  • 2 slices bacon
  • 1 potato
  • 1 green onion
  • 1 egg
  • salt and pepper

I made mine for 2 people and used a 9 inch cast iron skillet. If you are increasing the number of people, be sure to use a larger skillet. Start by cutting the bacon into pieces and frying until done. Remove from the skillet and set aside. Add diced potato and cook until almost done. Add chopped green onion during the last minute or so of cooking. Add the bacon back into the mixture. Season with salt and pepper to taste. Make a well and crack in one egg. Cover and turn off heat. Cook until the egg is how you like it.

Farmer's Breakfast Skillet

This hearty breakfast skillet is made with eggs, bacon, onions, peppers, and tomatoes! It's an easy one-pan breakfast recipe that's perfect for a weekend brunch.

Ingredients

I have made this for breakfast twice my husband and I just love love it. The only thing I’ve changed was I added breakfast sausage to it and scrambled our eggs separate. Love it thanks for a great breakfast.
