Are you thinking of making simple, tangier pasta tonight? What about "Creamy Buttermilk Pasta Recipe"? Try your hands with the new ingredient buttermilk.
Buttermilk brings creamy thick sauce to this Rotini pasta; everyone would love this rich tangier taste. Cheese is not a compulsion here, as buttermilk will care for the creamy texture.
If you are reading my recipes already, you might have noticed that I am not in the favor of cheeses. And I try to control it as for as I can. I do not prefer it not because of its taste, but because I am worried about the fat content it is loaded with.
I have enough fat and do not wish to add any more unknowingly. I need to underline the word 'wish', sigh! Everyone out in the world wishes for the same.
But are we making our wishes come true? Huh! We are just substituting fat with another fat..leave it.. it is another story to worry about.
I love to use Rotini pasta always. The spiral shape blends and can hold the sauces very well. Half of our work is done as a cook if the food looks great.
The spiral pasta does the cook's job perfectly of making the food look good. The perfectly cooked pasta with the creamy buttermilk sauce glides in the mouth. I'm sure everyone would be loving it.

I added Mariana sauce to add flavor and color to the recipe, but this is optional. I went with dried parsley as my refrigerator lacks fresh parsley. If you have fresh parsley, please substitute it with dried parsley.
How to make Rich, Creamy Buttermilk Pasta:
Cook pasta as per the package directions. Drain it and keep it aside.
Add buttermilk, cornstarch, marinara sauce, parsley, and salt in a mixing bowl. Stir, combine well and set aside.
Heat oil in the pan, saute garlic till it leaves out the aroma in the air. Add drained pasta to it.
Add cooked pasta and the buttermilk mixture to the pan.
Over low heat, cook until the sauce thickens and looks creamy. Keeping in a simmering flame is essential as buttermilk has the property of curdling when heated.
Serve hot with condiments as per your wish. We enjoyed it along with the grilled chicken.
Tips and Variations:
Do not add any oil while cooking pasta, as it may not allow the pasta to blend with the sauces.

- 1 cup pasta
- 3 cup water
- 1 cup buttermilk
- 2 tablespoon corn starch
- 2 tablespoon marinara sauce optional
- 2 teaspoon dried parsley
- ½ teaspoon salt or as required
The making
- 1 teaspoon olive oil
- 2 teaspoon garlic minced

Cook pasta in water as per the package direction. Drain it and keep aside.
In a mixing bowl, add buttermilk, corn starch, marinara sauce, parsley, and salt. Stir and combine well. Set aside.

Over medium heat, place a pan. Add olive oil and minced garlic.
Stir until its fragrant.
Add cooked pasta, and buttermilk mixture to the pan.
Over low heat, cook until the sauce thickens and look creamy.
Serve hot.

We had some buttermilk to use up so we tried this recipe; had never used buttermilk in a pasta dish before. We loved it. We added a cooked link of hot Italian sausage to the sauce. Will make again.
